I am simply a 40 something year old woman who learned to cook from scratch as a child and have done so regularly throughout life. I love to make baked goods and I’m quite good at it. I strongly believe in creating food that is filling, flavorful and satisfying.

Pan Differences As you become adept at making home baked goods, you’ll find that the type of pan you use can cause small differences in the end results. I don’t have experience with all of these but they are the most common types in the US.  Dark Coated  Glass  Tin or Aluminum  Cast iron  Crockery & other I avoid thin aluminum pans because things seem to burn and stick too easily. Thick glass works well but the outside and bottom sometimes gets done faster, so I turn the oven down a little.

Rub a thin layer of oil or butter around the inside bottom and sides of your pan. 2. Sprinkle a small handful of plain flour inside the pan. 3. Tilt the pan while tapping the bottom lightly. 4. Continue tilting the pan in different directions while tapping, until the entire bottom and all sides are lightly coated with flour. 5. Turn the pan upside down and tap to remove excess.
